Step 1
In the bowl of a stand mixer, add the starter, flour, cup of water, 1 tsp of sea salt, and olive oil.
Step 2
Mix just until the shaggy dough forms.
Step 3
Switch to a dough hook and knead on low for 5 minutes or until the dough has a soft, supple feel to it.
Step 4
Place the dough ball into a greased bowl, cover it with a damp towel, and allow it to sit for 8 hours or overnight for the bulk dough rise.
Step 5
When ready, punch the air out of the dough, lightly flour a work surface, and place the dough onto it.
Step 6
Knead for 2 minutes.
Step 7
Use a bench scraper, knife, or pizza cutter to cut the dough into 12 even pieces.
Step 8
Take each piece and roll it into a long tube about 8 inches long.
Step 9
Place on a baking sheet. Continue rolling out the dough until all 12 pieces are done and placed on a baking sheet.
Step 10
Cover them with a tea towel and allow them to rise for one hour.
Step 11
Preheat the oven to 400F.
Step 12
Brush or spray the shaped breadsticks with water.
Step 13
Bake for 20 minutes.
Step 14
Remove the breadsticks from the oven.
Step 15
Brush with melted butter and sprinkle with chunky sea salt.
Step 16
