Step 1
In a mixer or blender, add eggs, cottage cheese, seasoning and milk. Blend till eggs are well incorporated.
Step 2
Pour the mixture into the mixing bowl. Add shredded cheese and half of the veggies. Mix well. Gently whisk to combine.
Step 3
Spray the silicone molds with oil. Pour the egg mixture into each of the silicone molds. Only fill 3/4 of the mold since eggs will expand on cooking.
Step 4
Sprinkle in the remaining half of all of the veggies on top.
Step 5
Cook the egg bite cups for 12-15 minutes at 300 degrees Fahrenheit. Insert a toothpick in the center. When the toothpick comes out clean, the eggs have set.
Step 6
Remove promptly after cooking. Serve warm and enjoy !

Pour 1.5 cups of cold water into the inner pot of the pressure cooker and place a trivet inside the inner pot.
Step 8
Pour the egg batter as described above. Pour it into the egg molds, dividing the mixture evenly. Only fill 3/4 of each mold. Cover the silicone mold tightly with foil and place it on the trivet.
Step 9
Close the lid. Vent in Sealing position. Choose cook time for 9 minutes on high pressure. Once cooking time has elapsed, let the pressure release naturally for 10 minutes.
Step 10
Remove the egg bite mold from the inner pot and let rest for 2-5 minutes. Remove the foil. Then flip the mold upside down onto a plate. Egg bites should just slide off. Serve and enjoy !
