Preheat the oven to 350 degrees F. Spray 6 cups in a muffin tin generously with nonstick spray.

In a large bowl, whisk the eggs. Then whisk in the cheese, cottage cheese, salt and pepper.

Pour six equal amounts of the mixture into the muffin tins. Top with bacon bits.

Bake 30 minutes, or until the eggs are completely cooked. Remove from the oven, take out of the tin and serve warm.

Add 1 cup water to Instant Pot and place the trivet (that came with your Instant Pot) inside.

Add eggs, monterey jack, and cottage cheese to a blender and process until smooth (about 30 seconds). Add green onion, red pepper and spinach and give it a quick pulse to combine.

Divide the egg mixture evenly between the compartments of the silicone mold, tightly cover with aluminum foil.&nbsp;

Lower the silicone mold into the Instant Pot. It’s a bit of a tight squeeze, but with the 6-quart Instant Pot, it fit perfectly.

Place the lid on the Instant Pot and be sure that the vent is set to sealing. Press the MANUAL (high pressure) button and set the timer to 10 minutes. It will take about 5 minutes for the Instant Pot to come to full pressure, then the display will show a countdown timer.

Once the cooking time is up, allow the pressure to release naturally for 10 minutes, and then release any remaining pressure before opening the Instant Pot.

Remove the silicone mold from the Instant Pot and allow the egg bites to cool for a few minutes before enjoying.

Add all the ingredients except bacon to a blender and blend at high speed until smooth.

Lightly grease silicone mold with olive oil and add bacon crumbs into each egg bite mold, distribute evenly.

Stir the egg mixture and pour it into molds, don't fill them to the brim.

Add 1 cup of water to the Instant Pot, add the handled trivet and place the filled egg mold on top of the trivet.

Close and lock the lid, point the valve to Sealing. Select the Manual or Pressure Cook button and select high pressure for 8 minutes. Followed by 5 minutes Natural Pressure Release, after which release any remaining pressure manually.

Remove egg mold from the IP, let them cool for 5-7 minutes, after which turn the mold upside down on a plate, and gently push out the egg bites.

Garnish with more bacon and chopped green onions.

We have discovered these Egg Bites last year when we’ve stopped at our local Starbucks and ordered some Sous Vide Egg Bites. They were so charming, delicious and adorable, that we just fell in love with them. Not only they are cute and easy to make, but they are the perfect family breakfast.

Instant Pot Egg Bites Recipe Video

These make-ahead veggie egg bites are loaded with healthy veggies and plenty of protein. Make a batch once, and have breakfast ready to grab and go all week long.

Veggie Egg Bites

olive oil cooking spray

vegetables

Dijon mustard

tsp curry powder (optional)

tsp smoked paprika (optional)

salt and pepper (to taste)

Preheat oven to 350 degrees F.

Lightly spray the muffin tin with cooking spray.

Spray a non-stick skillet with cooking spray, and heat over medium-high heat. Add veggies and cook for 5-7 minutes, until just softened. Drain off any excess liquid, and set aside to cool.

Whisk the eggs, mustard, curry powder, smoked paprika, salt and pepper in a mixing bowl.

Divide the vegetables evenly among the 12 cups in the muffin tin. Top with cheddar cheese.

Carefully pour the egg mixture over the veggies and cheese, filling each cup evenly.

Bake for 18-20 minutes, until the eggs begin to puff up.

Allow the egg bites to cool. Then remove from the pan, and refrigerate for up to 5 days.

Air Fryer Egg Bites

heavy cream

bacon (pre-cooked and chopped)

green onions (sliced)

Preheat air fryer to 340°F.

Whisk eggs, cream, mustard powder, salt &amp; pepper in a medium bowl until fluffy and pale yellow in color.

Divide bacon, cheese and green onions over the cups of the molds (or small bowls).

Place in the air fryer basket and pour egg mixture overtop.

Cook in the air fryer for 11-13 minutes stirring after 7-8 minutes. Cook just until eggs are set (they will continue cooking a little bit once removed. Rest 5 minutes before serving.

Add all of the cashew cream ingredients to a blender or blender cup and blend until it forms a smooth paste

Then add eggs to a mixing bowl, followed by all of the cashew cream and whisk to combine

Once eggs and cashew cream are mixed together well, scoop mixture into a muffin tin greased with cooking spray.

Then top with pieces of bacon

Next place the muffin tin, into another baking pan, then place on the middle rack in the oven, then and pour about 3 cups of hot water into the baking pan until it come about half way up the muffin tin.

Bake at 300°F for 25 minutes, or until the eggs are completely cooked

Allow to cool completely before removing from the muffin tin

Preheat the oven to 350. If using a muffin pan that needs greasing, spray it with nonstick cooking spray.

Beat the eggs in a large mixing bowl and season to taste with salt and pepper. Add the mix-ins. Stir well to combine.

In a blender, place the eggs, cottage cheese, salt, pepper, and shredded cheese, if using. Blend until well combined. Tap the blender on the counter to remove any air bubbles.

Prepare Egg Bites

Divide bacon (or filling of your choice) evenly between the egg bite molds. Pour the egg batter into the egg molds, dividing the mixture evenly. Each egg mold should be about 3/4ths of the way full. Cover the egg bite mold tightly with foil.

Prepare Instant Pot

Pour 1.5 cups of cold water into the inner pot of the pressure cooker and place a metal rack inside the inner pot. Place the egg bites on the rack, stacking the molds if you prepared a double batch.

Pressure Cook

Place the lid on the inner pot and be sure the vent knob is sealed. Set cook time for 9 minutes on high pressure. Do this by hitting manual or pressure cook and use the +/- buttons to adjust to read &quot;9.&quot;

Release Pressure

Once cook time has elapsed, let the pressure release naturally for 10 minutes.

Remove

Remove the egg bite mold from the inner pot and let rest for 2-5 minutes before inverting the mold onto a plate.

Spray the inside of cups of silicone mold thoroughly with a cooking spray.

Add the chopped green onions and ham (if using) and put the silicone mold in the air fryer basket. Cook these toppings in the air fryer at 360F for 3 minutes.

Meanwhile, in a large measuring cup with a pouring spout, combine the eggs, milk, salt and pepper.

When the toppings are done cooking, take the basket out of the air fryer.  Carefully pour the egg mixture into the egg bites mold cups over the toppings. Top the egg bites with shredded cheese.

Cook the egg bites in the air fryer at 360F for 12 minutes, or until the eggs are set.
