Step 1

Heat oil in a large pot.

Step 2

Add in onion and green pepper and sauté until tender, 3-4 minutes.

Add in garlic and cook for an additional minute.

Step 4

Stir in enchilada sauce, black beans, corn, salsa, rice and cilantro.

Step 5

Season with salt and pepper to taste.

Step 6

Heat oil in a medium pot.

Step 7

Add flour and stir for one minute.

Step 8

Stir in the seasoning.

Step 9

Slowly whisk in stock. Simmer for 10-15 minutes or until thick.

Step 10

Season with salt and pepper to taste.
