Step 1

Add the mayo, avocado, basil, lemon juice and a pinch of salt and pepper to a mini food processor or blender. Blend until mostly combined, it’s shouldn’t be completely smooth.

Step 2

Slice open the ciabatta or similar bread horizontally.

Step 3

Spread the avocado mayo equally on each half of the bread.

Step 4

On the bottom half of the bread, layer the tomatoes. Sprinkle with a big pinch of salt and pepper.

Step 5

Add the cooked bacon.

Step 6

Then the lettuce leaves.

Step 7

Top the sandwich and cut into 4 equal pieces.

Step 8

Serve immediately.
