Cook the pasta al dente (1 or 2 minutes shorter than package directions specify) so it holds its shape when tossed with the vegetables and vinaigrette. Ripe for riffs, the salad is also delicious with cheese-filled tortellini.

Farmers' Market Pasta Salad

baby heirloom tomatoes

zucchini,

red bell pepper,

corn kernels

peaches (about 2 medium)

green onions

Parmesan Vinaigrette

(8-oz.) package penne pasta*

chicken (about 10 oz.)

basil

cilantro

Toss together first 7 ingredients in a large bowl, and let stand 10 minutes.


Meanwhile, prepare pasta according to package directions. Add hot cooked pasta and chicken to tomato mixture; toss gently to coat. Season with salt and pepper to taste. Transfer to a serving platter, and top with basil and cilantro.


*1 (20-oz.) package refrigerated cheese-filled tortellini may be substituted.


Just a great summer meal or perfect picnic dish.  For those reviewers who claim to have "followed the recipe to a t" yet changed it dramatically and then reviewed it negatively, first try this (and all recipes) as written!!  It's fabulous!  I'm both amused and frustrated by people who change a recipe and then give it a bad review.  They are Not reviewing the printed recipe, but Their own!  It has then become their recipe/cooking they and their families aren't liking!!!

Sooo tasty! Light and fresh. I used white balsamic vinegar as another reviewer suggested and it worked great! Will definitely make this again and again.

The recipe looked as if it would be yummy. Followed the recipe to the T and was not happy at all with the outcome. The grated parmesan that is added to the vinaigrette tastes almost like sand when you take a bite out of the salad. I questioned putting basil and cilantro in the same salad, but because everyone raved about it, I put it in. Was not happy with the flavor outcome. I doubled it for a large crowd and it was hardly touched! Learned my lesson (again!) and will not make a new recipe for a group. Will try at home first. I made it with the tortellini, maybe it would be better with the penne?

I made this as a side dish without the chicken.  It was so good, and even better the next day. Great for fresh tomatoes from the garden.

We love this salad!  I do add carrots and broccoli, and I sauté the veggies just a little (minus the tomatoes) before I add them to the peaches and the parmesan vinaigrette.

Made wo chicken since we were having ribs.  Very good/fresh.  Really like the dressing.  8 oz. of penne was almost too much, made a ton of salad.

WONDERFUL!  My cousin shared this recipe with me and I'll be honest I was a little hesitant seeing fresh peaches and corn in the salad.  But we were pleasantly surprised at how delicious it was!  And since I don't eat meat, I omitted the chicken. It's bursting with flavors of fresh vegetables, parmesan and herbs!  I highly recommend you try it!

Perfect summer salad. I might use a little less lemon and a little more balsamic, because I love the taste of the balsamic.

This was amazing! I replaced the zucchini with roasted green beans. I also used one pound of penne pasta instead of 8 oz. It was just delicious. Would definitely make again.

For a prettier salad, use white balsamic vinegar instead of the darker, makes for a great presentation.

Unbelievably good; it screams with the freshness of the season. I cooked the corn (easily done in the microwave); I think the extra sweetness that cooking brings out is worth the extra few minutes.

My family loved this..made full recipe hoping for some left overs did not happen they gobbled it all up!  Substituted fresh home smoked turkey breast  it was delicious!  Will not forget this one for a long time to come!  Great meal for hot summer dinner or lunch in steamy hot Florida!

Delicious! I made a big batch to take for lunch, and it kept all week.  Very satisfying, and refreshing as the weather heats up.  I think apples would taste great in the mix, too.

Instead of the Parmesan vinaigrette, I just used EVOO, balsamic vinegar, lemon juice, and s + p to dress the salad.
