Step 1
Lightly season the steak with salt and pepper. Place it in a large ziplock bag and add 2 Tbsp olive oil, 1 Tbsp chili powder, 2 Tbsp minced garlic, 2 tsp ground coriander, and the juice of 1 lime.
Step 2
Remove as much air as possible and allow to marinate for at least 10 minutes.
Step 3
While the steak is marinating, wash and cut your peppers into strips. Cut your onion into similar sized slices.
Step 4
Heat a large skillet over medium high heat (cast iron is best here). Add in 1 Tbsp of olive oil and cook the peppers and onions until they become soft.
Step 5
Season with salt and pepper and drizzle a bit of lime juice over the top.
Step 6
To cook the steak, heat a grill pan over medium high heat, add a bit of olive oil and grill the meat for 3-4 minutes each side for a medium steak.
Step 7
Remove from the pan and allow to rest for a few minutes. This will make sure the meat retains its moisture.
Step 8
Cut the meat into thin slices against the grain to prevent chewiness.
Step 9
