Step 1
Cut potatoes into 1/8"shoestrings.
Step 2
Rinse and let sit covered in water for 15 minutes.
Step 3
Drain and dry potatoes.
Step 4
Heat lard in dutch oven over medium high heat to 375.
Step 5
Par fry for 10 minutes.
Step 6
Remove from oil and transfer to parchment paper sline baking sheet and dry.
Step 7
Place in freezer for 30 minutes.
Step 8
Heat oil back to around 375.
Step 9
Fry for about 5-6 minutes.
Step 10
Transfer to paper towel line plate and salt to taste.
