Step 1

Preheat oven to 300°F. Line a large rimmed baking sheet with parchment paper.

Step 2

In a large bowl, whisk together oats, apple, pecans, and pepitas.

Step 3

In a small bowl. whisk together the maple syrup, coconut oil, cinnamon, vanilla, ginger, salt and nutmeg until well blended.

Step 4

Add syrup mixture to the oats mixture and stir until well coated. Spread mixture in a single layer on prepared baking sheet.

Step 5

Bake in preheated oven for 25 to 30 minutes or until oats are golden brown. Let cool completely on pan.

Step 6

Transfer granola to an airtight container and stir in dried fruit, if using.
