Ingredients: 3 cups fresh pineapple (diced, about 1 medium pineapple); 1 cup tomato (diced); ½ cup chopped onion (yellow or red, about ½ small onion); ¼ cup chopped fresh cilantro; 1 medium jalapeño* (seeded and finely diced); 3 tablespoons fresh orange juice (about one medium orange, can also sub lime juice); ¼ teaspoon fine sea salt; ¼ teaspoon of chipotle pepper

This fun salsa is bursting with tropical vibes from fresh diced pineapple. Serve this as an appetizer with chips or on top of fish, chicken or shrimp!

Fresh Pineapple Salsa

pineapple (diced, about 1 medium pineapple)

tomato (diced)

onion

cilantro

jalapeño*

orange juice (about one medium orange, can also sub lime juice)

fine sea salt

chipotle pepper

In a medium serving bowl, combine the pineapple, tomato, onion, cilantro, and jalapeño. Add the orange juice, salt and chipotle pepper and stir to combine.

Season to taste with more salt or citrus juice if needed.
