Step 1
Chop the garlic and shallot and set aside in a bowl.
Step 2
Add remaining ingrediants to bowl and set aside.
Step 3
Turn on stove top to medium low heat and add one cup of Olive Oil to skillet.
Step 4
Immediately after you add the Olive Oil, add the remaining ingrediants except the parsley if, you are using it.
Step 5
Gently simmer on the stovetop for 45 min. Stir occasionally and make sure to scrape down the sides of the skillet.
Step 6
Make sure to taste the garlic oil and adjust as necessary with salt. Be careful, this will be extremely hot!
Step 7
If you are using parsley, now is the time to add the parsley while the oil cools.
Step 8
Once the oil cools, transfer to a airtight container and store in the fridge.
