Prepare rice or pasta

Step 2

Press tofu for 30 minutes

Step 3

Whisk together sauce ingredients

Step 4

Microwave frozen veggies and chop

Step 5

Chop remaining veggies

Step 6

Cut tofu into cubes.  Add to ziplock along with 2 tsp soy sauce and gently toss to coat

Step 7

Whisk remaining tofu spices including the panko and add to bag.  Again - gently toss to coat.

Step 8

Air fry tofu for 10 minutes at 400° F.

Step 9

Saute onions, scallions, and garlic until softened and aromatic

Step 10

Add mushrooms and cooked frozen veggies and stir

Step 11

Add sauce

Step 12

Add air-fried tofu and stir to ensure everything is evenly coated

Step 13

Serve over rice or noodles
