Step 1
Place the milk into a small bowl and add the dry yeast. Allow to stand for around five minutes.

Melt the butter in the microwave.
Step 3
Place the flour, salt and sugar in a large bowl. Make a well in the centre, and pour in the milk mixture, then add the butter and finally the egg (beaten). Knead the mixture until it forms a soft dough.
Step 4
Put the dough back in the bowl and cover with a lid, cling wrap or a damp tea towel. Allow to rise in a warm place for around 40 minutes.
Step 5
Meanwhile, cut the plums in half and remove the pits.
Step 6
Grease the lamington pans, or use baking paper.
Step 7
Punch the dough down and roll it out to fit either one large oblong lamington tin, or two smaller square ones. Keep the dough thick - it is more like a cake than a tart.
Step 8
Put the dough into the prepared pan (or pans). Pinch the sides to make a higher edge. Place the plums on top, cut side facing up. Cover with sugar, and dot with butter.
Step 9
Bake at 160 C for 40 to 50 minutes. Serve warm with cream.
