Crunchy vegetables pickled in white-wine vinegar, known as Giardiniera, can be served as a garnish or a side dish.

Giardiniera

white-wine vinegar

salt

sugar

bay leaf

cloves

celery seeds

celery stalks, trimmed, peeled,

carrots,

cauliflower,

yellow onion, trimmed, peeled,

serrano peppers

In a large saucepan combine the vinegar, salt, sugar, bay leaf, cloves, celery seeds, and 2 1/2 cups water. Bring to a boil. Add remaining ingredients and return to a boil.

Remove from the heat and cool to room temperature. Transfer to a container with a tight-fitting lid.

GREAT brine, but there's a lot of it. Added twice the amount of celery, carrots and cauliflower and it turned out fine. If you can't find loose serranos try one Thai bird chili, sliced lengthwise and seeds removed - lovely flavor. It gets better with time. I would love to can this.

I absolutely love Giardiniera, but stop buying it years ago because of all of the 'extra' ingredients you find in processed foods.  I have searched for and made other recipes for this, but THIS is the recipe!  I will never be without a container of this in my frig., it's seriously great.  The second time I made it, I bumped the heat up a little, I've also added a bay leaft and some fresh sliced fennel.  This is seroiusly good and you should have this in your life and in your frig!

This easy-to-prepare spicy pickled vegetable dish can be served as a garnish or a side.
