Step 1

Preheat the oven to 180°C. Grease a 22cm square cake pan and line the base with baking paper.

Step 2

In a large bowl, combine the flour, baking powder, ginger, cinnamon and oats. Set aside.

Step 3

Place the molasses, butter and sugar in a small saucepan and stir over low heat until the butter has melted.

Step 4

Make a well in the dry ingredients and gradually stir in molasses mixture until well combined. Add the milk and egg and stir until smooth. Pour the mixture into the prepared pan and bake for 1 hour or until a skewer inserted into the centre comes out clean, but cake is still sticky on top.

Step 5

Cool for 5 minutes, then turn out onto a wire rack. Once cool, cut into 16 squares.
