Blend the dry ingredients into the egg mixture., Allow the batter to rest for 30 to 60 minutes; it'll become somewhat puffy., Preheat and lightly grease your waffle iron., Pour batter onto the hot, greased iron and close it., Bake until most of the steaming has stopped. Gluten-free waffles take longer to bake than conventional ones; if your iron has a "done" indicator, you'll need to bake the waffle longer than indicated. They're done when very little steam is escaping from the iron, and they release easily., Serve waffles warm, with butter and syrup, fruit and whipped cream, ice cream and fudge sauce, or any other sweet deliciousness you can dream up!
