Step 1
Begin by combining all the dry ingredients together in a large bowl and mix until combined.

Add the wet ingredients to the dry ingredients and mix until the perfect batter consistency has formed.

Turn your skillet to medium heat (about 300 degrees if using an electric griddle). If your skillet is not a nonstick, I recommend adding a little vegan butter to prevent the pancakes from sticking. Add half a cup of batter to the skillet and let cook until bubbles have formed on top. Once the top has some bubbles, flip the pancake. The flipped side should be nice and golden brown. After about 1-2 minutes the other side should be cooked and you will be ready to enjoy your blueberry protein pancakes!

Top with your favorite pancakes and a generous drizzle of maple syrup.
