Preheat oven to 160C or 140C fan. Line 3 large baking trays with baking paper.
Step 2
Stir the chocolate and butter in a small saucepan over low heat until smooth. Set aside to cool slightly.
Step 3
Whisk the flour, combined sugar, cocoa powder and bicarb soda in a large bowl until well combined. Stir in the egg and vanilla, then the chocolate mixture until combined. Stir in the chocolate chips. Roll 1-tbsp portions of cookie mixture into balls. Place, about 5cm apart, on prepared trays and press to flatten to 4cm wide. Bake for 18 mins. Set aside on the trays to cool.
