Step 1

Preheat oven to 350º F. Line a baking sheet with foil or parchment paper.

Step 2

Blend almond flour, monk fruit sweetener, salt and baking soda in a large bowl.

Step 3

Add a softened stick of butter to dry ingredients and use your hands to mix it all together (I recommend using gloves) until well combined.

Step 4

Add egg and vanilla to mixture and continue to blend by hand. The mixture will be wet. Add chocolate chips.

Step 5

Roll 1 inch dough balls and place on baking sheet. Do not flatten the cookie - they will bake up really soft in the middle if you leave them in the rounded shape. You'll have enough dough to make about 14-16 cookies.

Step 6

Cook in oven for about 12-13 minutes until top of cookies start to brown. Remove from oven and let sit for 10 minutes before removing from the tray and digging in!

Step 7

Store cookies in an airtight baggie for up to 3-4 days.
