These almond flour chocolate chip cookies are gluten-free, grain-free, and sugar-free (except there is sugar in the chocolate chips). It&#x27;s the perfect way to enjoy a sweet, soft cookie without the guilt!

Gluten-Free Chocolate Chip Cookies Sweetened With Monk Fruit

Honeyville Blanched Almond Flour

ZenSweet Monk Fruit Sweetener

Kosher salt

tsp baking soda

softened (not melted) butter ((equivalent to 1 stick))

Tbsp vanilla extract

chocolate chips (or sugar-free carob chips)

Gluten-Free Chocolate Chip Cookies Sweetened with Monk Fruit

Preheat oven to 350º F. Line a baking sheet with foil or parchment paper.

Blend almond flour, monk fruit sweetener, salt and baking soda in a large bowl.

Add a softened stick of butter to dry ingredients and use your hands to mix it all together (I recommend using gloves) until well combined.

Add egg and vanilla to mixture and continue to blend by hand. The mixture will be wet. Add chocolate chips.

Roll 1 inch dough balls  and place on baking sheet. Do not flatten the cookie - they will bake up really soft in the middle if you leave them in the rounded shape. You&#x27;ll have enough dough to make about 14-16 cookies.

Cook in oven for about 12-13 minutes until top of cookies start to brown. Remove from oven and let sit for 10 minutes before removing from the tray and digging in!

Store cookies in an airtight baggie for up to 3-4 days.
