Step 1

Heat the water in the microwave until its about the same temperature as your hands (37 in Celsius).

Step 2

Crumble the yeast in the warm water and stir until combined.

Step 3

Add the olive oil, maple syrup and salt and stir. Mix in the psyllium. Add the oats and stir. Let sit for five minutes.

Step 4

Add flours and mix with a hand mixer for about five minutes.

Step 5

Pour the dough on a floured surface. Sprinkle the dough very lightly with more flour. Divide the dough into 12 equal pieces. Shape the pieces into rounds. Place them on a baking pan lined with parchment paper.

Step 6

Let the rolls rise uncovered for 20-30 minutes.

Step 7

Cook at 440 degrees (225 in Celsius) for about 15 minutes.
