Step 1

Bring the honey and water to a simmer in a saucepan. Whisk together until smooth and the consistency of syrup, about 1 minute. Remove from the heat and cool.

Step 2

Combine the bourbon, honey syrup, and lemon juice in a cocktail shaker. Cover and shake until frothy, about 20 seconds.

Step 3

Add 2-3 ice cubes to the shaker, cover, and shake again until well chilled, about 20 seconds further.

Step 4

Strain over ice into a rocks glass. Garnish with lemon and thyme.
