Step 1

Preheat oven to 200C/400F. Peel and chop beets and carrots. Chop sweet potato and cauliflower florets into bite sized pieces. Add veg (except beets) to a large mixing bowl and drizzle with enough oil to coat. Sprinkle with 3/4 tsp salt and toss veg. Line a baking tray with parchment paper and layer the veg evenly onto tray.

Step 2

Toss beets into mixing bowl and dress with olive oil and 1/4 tsp sea salt. Place on a separate parchment lined baking tray. Transfer all root vegetables into the oven to bake for 30-40 minutes, or until golden and cooked.

Step 3

Spread hummus into a bowl and top with roasted root vegetables. Serve.
