Step 1

Put the warm water and sugar into the bowl of a stand mixer. Stir to dissolve the sugar. Add the yeast and let the mixture sit for about 10 minutes.

Step 2

On low speed, add 1 cup of the flour, milk, honey, butter, egg, egg yolk and salt. Mix until combined. With the dough hook attachment, slowly start adding 6 to 6 1/2 cups more flour until the dough pulls away from the sides of the bowl. Once this happens, continue to mix for about 3 more minutes. (You can also remove it and knead by hand for about 5 to 8 minutes.)

Step 3

Brush the top of the dough with a little olive oil to coat, cover and let the dough rise for about 1 hour. It should double in size.

Step 4

Punch the dough down and put onto a floured work surface. Divide into two. With a rolling pin, roll each half into a rectangle about 13 by 9 inches. Roll the dough up into a log and put into an oiled 9x5-inch loaf pan. Repeat with the second half. Cover and let the bread rise again for about 45 minutes.

Step 5

Bake the bread in a preheated 350-degree F oven for about 30 minutes or until golden. Remove from the oven and immediately brush with the melted butter. Cool completely before slicing.
