Peel a grapefruit.

Trim off the zest, cut the pith (white part) into 1-inch cubes.
Step 3
Wash the pith for at least 3 times to get rid of the bitter taste. Pretending you're washing small sponge cubes. Soak them in cold water and squeeze the water out.
Step 4
Put pith cubes in a pot, add cold water, and bring to a boil.
Step 5
Transfer the pith cubes into a bowl of cold water to wash them again. Squeeze water out of the pith cubes.
Step 6
Add sugar and water to a pan, bring to a boil.
Step 7
Add the pith cubes to the pan. Fry over medium heat until grapefruit piths get crystallized (about 50 minutes).
