Step 1

Preheat oven to 180C or 160C fan. Place the potatoes in a roasting pan and spray with oil. Roast for 15 mins.

Step 2

Meanwhile, heat a non-stick frying pan over medium-high heat. Sear the lamb for 1-2 mins each side or until golden.

Step 3

Add lamb, onion, capsicum and tomatoes to the potatoes. Pour over the marinade. Toss to combine. Roast for 45 mins or until potatoes are golden and lamb is tender. Serve with beans.
