Step 1

Slice off the head of garlic to expose some of the cloves inside. Place the heads on a piece of foil. Drizzle with olive oil and wrap in the foil. Roast (in oven or grill at 350-375 degrees) until it is lightly browned and tender, about 30 minutes

Step 2

Add bacon into a 10-inch skillet over medium-high heat and cook until fat renders and bacon crisps. Remove bacon to a large bowl. Drain bacon fat into a bowl, but leave 1 tablespoon in skillet.

Step 3

Add shallots into pan and cook in bacon grease until lightly browned. Remove to bowl with bacon.

Step 4

Chop brussels in half and place in a large bowl and toss with reserved bacon fat and Lane’s Q-nami Rub. Pour them in the skillet and cook until they caramelize, about 8-10 minutes per side.

Step 5

Mince 2 to 3 cloves roasted garlic and shallots and add them to the bowl with the bacon.

Step 6

Remove brussels sprouts from skillet and place into the bowl with bacon, roasted garlic and shallots, toss to combine. Serve & Enjoy!!
