Step 1

Combine chicken taco seasoning, olive oil, orange juice, lime juice, cilantro, and a couple large pinches of salt and pepper in a small bowl.

Add chicken breast, nestling it into the marinade until it's covered.

Step 3

Cover and refrigerate for at least 1 hour and up to 6 hours.

Step 4

Heat cast iron griddle over medium high heat.

Step 5

Once hot, reduce to medium and add chicken.

Step 6

Cook in batches until a dark golden brown crust forms on the outside and the chicken is cooked through.

Step 7

Dice and serve inside corn tortillas with your favorite taco toppings.
