Step 1
Dissolve the yeast in 2/3 cup water, and the salt in another 2/5 cup. Mix the flour with the semolina, then add the oil, yeast dissolved in water and salt water. Knead for a few minutes, until you have a soft and relatively smooth mixture.
Step 2
Shape into a long loaf, brush with oil and let rise, covered with a damp cloth for around 3 hours.
Step 3
Preheat a convection oven to 350°F. Cut the dough into strips on the shortest side. Holding the strips at both ends, gently stretch them out to lengthen them. Set the grissini (breadsticks) on a baking tray lined with parchment paper and let rest for 10-15 minutes. Bake for around 15-20 minutes.
Step 4
This recipe makes around 70 breadsticks. Cooked in two batches on three trays at a time. During baking, swap the top and bottom trays around, leaving the one in the center of the oven as it is.
