Italian for "cured meats and vegetables", this is antipasti at its tastiest best.

An apertivo favorite, crunchy homemade grissini (breadsticks) are delicious on their own, wrapped in prosciutto or served with other nibbles. 

Grissini

2CUPS all-purpose flour

10OZ. remilled durum wheat semolina

1TBSP. fresh brewer's yeast

1TBSP. salt

Dissolve the yeast in 2/3 cup water, and the salt in another 2/5 cup. Mix the flour with the semolina, then add the oil, yeast dissolved in water and salt water. Knead for a few minutes, until you have a soft and relatively smooth mixture.

Shape into a long loaf, brush with oil and let rise, covered with a damp cloth for around 3 hours.

Preheat a convection oven to 350°F. Cut the dough into strips on the shortest side. Holding the strips at both ends, gently stretch them out to lengthen them. Set the grissini (breadsticks) on a baking tray lined with parchment paper and let rest for 10-15 minutes. Bake for around 15-20 minutes.&nbsp;

This recipe makes around 70 breadsticks. Cooked in two batches on three trays at a time. During baking, swap the top and bottom trays around, leaving the one in the center of the oven as it is.

Cornmeal and Poppy Seed Breadsticks

For the starter, combine 1 2/3 cups of the pizza flour with 1 cup of water and 2 teaspoons of fresh brewer’s yeast; knead together, then let rise for about 90 minutes. Add 1 1/2 cups of Italian 0 flour, 3/4 cup of cornmeal, and the remaining 1/3 cup of pizza flour to the starter. Knead together, then let rise for another 45 minutes. Once risen, form the dough into a ball and let it rise uncovered for another hour; divide the dough, forming ribbons; mix some more cornmeal and some poppy seeds in a tray and use this to coat the dough. Roll up the breadsticks, twisting them into spirals; transfer to a baking sheet lined with parchment paper and bake for 15 minutes at 400°F, turning the tray half-way through. Let cool, then wrap in strips of lardo and sprinkle with chopped chives, marjoram, and black pepper.

Forget the traditional Caesar salad, this version with poached eggs and prosciutto wrapped grissini is now the salade du jour.

(150 grams) semi-dried tomatoes

Simple Sourdough Breadsticks

400 g strong white bread flour

water 38C

g sea salt

active starter

Parmesan

Chilli flakes

Fennel seeds

Rosemary

Sesame seeds

Poppy seeds

Egg wash or olive oil

Combine the flour and salt in a bowl, then add the oil.  In another bowl mix the water and starter.  Add to the flour and mix.

Knead for 5 minutes, then cover and leave for a minimum of 3 hours at room temperature (18-23C).

Tip the dough out onto a surface dusted with maize and white flour.  Take a rolling pin or simply pat out to approximately 1cm in thickens.  Brush with egg wash or olive oil. Sprinkle with chosen flavourings and press into the dough.

Cut the dough into strips with a pizza cutter or sharp knife.  Stretch a little and double over and twist.  Place them on a baking tray and cover with a tea towel.

Let the dough strips ferment for 1 hour. Preheat your oven to 230ºCfan.

Bake for 18-20 minutes or until golden brown and crispy. Let them cool on wire rack. Best eaten on the day of baking.
