Ingredients: 8 ounces shredded lettuce; 2 avocados, (chopped); 1 cup chopped tomatoes; 1 jalapeno pepper, (sliced (optional!)); ¼ cup chopped cilantro; kosher salt and pepper; 3 tablespoons freshly squeezed lime juice; 1 tablespoon olive oil

We love this guacamole salad. It's the perfect light and refreshing side dish to your favorite tacos or enchiladas - and has all of the components of guacamole! So delicious and simple and customizable.

Guacamole Salad

lettuce

avocados, (chopped)

tomatoes

jalapeno pepper, (sliced (optional!))

cilantro

kosher salt and pepper

lime juice

olive oil

Combine the lettuce, avocado, tomato, jalapeños and cilantro in a bowl. Season all over with a big pinch of salt and pepper. Drizzle with lime juice and olive oil. Toss well and serve immediately.
