We love this guacamole salad. It's the perfect light and refreshing side dish to your favorite tacos or enchiladas - and has all of the components of guacamole! So delicious and simple and customizable.

Guacamole Salad

lettuce

avocados, (chopped)

tomatoes

jalapeno pepper, (sliced (optional!))

cilantro

kosher salt and pepper

lime juice

olive oil

Combine the lettuce, avocado, tomato, jalapeños and cilantro in a bowl. Season all over with a big pinch of salt and pepper. Drizzle with lime juice and olive oil. Toss well and serve immediately.

Dice the avocados and tomatoes. Finely dice the red onion and jalapeño (seeds removed). Mince the garlic, and roughly chop the cilantro.

Add the avocados, tomatoes, jalapeño, red onion, garlic, and cilantro to a large bowl. Drizzle the olive oil over top. Juice the lime and add about 1 Tbsp to the salad to start, along with ¼ tsp salt.

Give the salad a brief stir, then taste and add more lime juice and salt to your liking. I ended up using 2 Tbsp lime juice total and ½ tsp salt. Enjoy immediately or refrigerate until ready to serve.

The avocado (Persea americana) is a tree that is native to South Central Mexico, classified as a member of the flowering plant family Lauraceae. Avocado (also alligator pear) also refers to the tree's fruit, which is botanically a large berry containing a single seed.

In a small bowl, whisk together the dressing ingredients.

Add chickpeas, avocado, jalapenos and shallot to a large bowl. Pour dressing over this mixture and toss gently to combine.

Top with cotija cheese and cilantro and serve.
