Step 1

Preheat oven to 180C (fan forced).

Step 2

Heat olive oil over medium heat. Add diced onions and fry until golden brown and soft. Set aside to cool.

Step 3

In a large bowl, pour milk (approx half), olive oil, eggs and salt and mix together.

Step 4

Slowly add the flour and gradually add the milk.

Step 5

Once the mixture gets heavy and thick add more milk and then mix in the fried onions.

Step 6

Gradually add halloumi cheese (one handful at a time) and add dry mint (optional).

Step 7

Mix in the pitted olives and add remaining milk.

Step 8

This flour mixture needs to be wet and soft (cake like consistency).

Step 9

Line 12-hole muffin tray with cupcake patties.

Step 10

Using an extra large spoon, fill each patty with the mixture.

Step 11

Bake for 30 minutes or until golden brown.

Step 12

Remove and place on a wire rack to cool.
