Step 1

To prepare the marinade: Whisk together the spice mixture and oil. Place the tofu cubes in an airtight container with a lid. Pour over the marinade and shake well. Put it in the fridge and refrigerate for at least an hour, or overnight.

Step 2

Thread the tofu cubes, red onion and banana chilli onto the skewers alternating in a sequence. Repeat until all four skewers are full.

Step 3

Add remaining marinade from the tofu container to a large frying pan and heat. Fry the kebabs until they are brown all around. You will need to turn them over frequently and press them against the surface to ensure even cooking.

Step 4

Prepare the couscous by placing it in a bowl with sea salt. Pour over the boiled water and fluff it up with a fork. The couscous is ready when all the water is absorbed.

Step 5

When the kebabs are all cooked and ready to go, serve them on a bed of couscous.
