Step 1

Heat the oven to 350°F and spray a bread pan with cooking spray.

Step 2

In a large bowl, combine the bananas, sugar, pineapple, buttermilk, melted butter, eggs and rum flavoring.

Step 3

In a separate large bowl, combine the flour, baking powder, baking soda, cinnamon, salt and coconut.

Step 4

Make a well in the center of the flour and add the wet ingredients. Stir until just combined, but do not overmix.

Step 5

Pour into the bread pan and place in the oven. Bake for 50 minutes to 1 hour.

Step 6

Use a toothpick to check for doneness. Check at least 3 spots. When the toothpick comes out clean, the bread is done.

Step 7

Let cool before slicing for best results.
