Hawaiian Banana Bread

all-purpose flour

salt

baking soda

cinnamon

eggs

white granulated sugar

butter

bananas (mashed)

pineapple

vanilla extract

chopped nuts (pecans

Whisk together the flour, salt, baking soda and cinnamon.  Set aside.  Cream the eggs, sugar, butter using a mixer.  Add bananas, crushed pineapple and vanilla extract and continue mixing.  Combine with flour mixture and mix all together with mixer.

Fold in nuts with spoon.  Spray a 9 x 5 loaf pan with cooking spray.  Add your batter to the pan and bake in preheated 350 degree oven for 60 to 65 minutes until middle tests done.

Remove from oven and let cool for 10 minutes before removing from pan.  Can drizzle with my recipe for basic powdered sugar glaze. Makes 1 loaf.

crushed pineapple, undrained (8 ounce)

buttermilk

butter, melted and cooled slightly

eggs,

tsp rum flavoring

all purpose flour

tsp baking powder

tsp baking soda

coconut

Heat the oven to 350°F and spray a bread pan with cooking spray.

In a large bowl, combine the bananas, sugar, pineapple, buttermilk, melted butter, eggs and rum flavoring.

In a separate large bowl, combine the flour, baking powder, baking soda, cinnamon, salt and coconut.

Make a well in the center of the flour and add the wet ingredients.  Stir until just combined, but do not overmix.

Pour into the bread pan and place in the oven.  Bake for 50 minutes to 1 hour.

Use a toothpick to check for doneness.  Check at least 3 spots.  When the toothpick comes out clean, the bread is done.

Let cool before slicing for best results.

Hawaiian Banana Bread with Pineapple, Coconut &amp; Macadamia Nuts is a delicious Hawaiian-inspired banana bread made with Dole crushed pineapple, coconut flakes, and chopped macadamia nuts. 

Hawaiian Banana Bread with Pineapple, Coconut &amp; Macadamia Nuts

all-purpose white flour

tsp salt

tsp vanilla extract

bananas

macadamia nuts (dry roasted & chopped)

unsweetened coconut flakes

Preheat the oven to 350 degrees.

Grease your loaf pan.

Dry roast your macadamia nuts for a few minutes until slightly browned.

Once they cool, chop them up. Set aside.

Combine your dry ingredients - all-purpose flour, sugar, baking powder, baking soda, and salt. Mix and set aside.

Combine your wet ingredients - eggs, vanilla extract, banana, and crushed pineapple with juice, and oil.

Mix the wet ingredients well.

Add your dry ingredients to the wet. Mix well, but don't overmix the batter.

Add the chopped macadamia nuts and unsweetened coconut flakes.

Fold the nuts and coconut into the batter. Again, do not overmix.

Pour the batter into the greased loaf pan. Into the oven for 55-65 minutes at 350 degrees.

Use a clean knife to make sure the banana bread is not sticky on the inside. Allow your banana bread to cool completely before cutting.

Hi! I’m just wondering if I can make this with dried pineapple instead of canned? Thank you!

Just back from a trip to Hawaii and this was just the thing to bake! I used fresh diced pineapple. Instead of a loaf, I made these as 12 muffins, they baked in 30 mins. 35min may be better. They’re tenderer than muffins so I cooled them in the muffin pan for a few minutes before taking out. Love that the added sugar is only 1/2 cup, so delicious!

This was such a wonderful recipe! My 4 year old daughter and I made this together and it was such a hit. We used butter and since I accidentally burnt the macadamia nuts, we used a mixed a pecans and walnuts instead. Will definitely make again!

I was looking for a Hawaiian banana bread recipe that used more bananas, most only call for one
Made as directed except omitted the coconut shreds inside and put some on top because we used coconut oil which gave it all the coconut flavor it needed

Cook time was a full 60 minutes

I made this in 2020 when we were all stuck at home- it was a huge hit! I would like to make it again but wondered if I can use butter instead of oil?

I loved this recipe and will never make just plain old banana bread ever again!

I had lost my original recipe and this looks close. I use regular walnuts rough chop. We like it that away. I highly recommend this recipe, it absolutely DELISH!!!

What a beautiful change from a regular banana bread recipe. This recipe turned out super moist and so delicious. I actually made two loaves one using Bob’s Red Mill Gluten Free 1:1 Flour and the other with regular flour. This was a massive hit in our house. I will definitely be making this again.
