Step 1
Place a rack in the center of your oven and heat to 350 degrees F.
Step 2
Line an 8x8-inch baking pan with parchment paper so that the paper overhangs two sides.
Step 3
In a food processor or high-powered blender, process 1 1/2 cups of oats, flax seeds, and almonds into a fine flour consistency.
Step 4
Combine the oat/almond flour mixture, remaining cup of oats, mashed banana, maple syrup, and water into a bowl. Stir together until everything is combined and crumbly.
Step 5
Press a little more than half of the oat mixture into an 8x8 inch pan lined with parchment paper, then set the rest of the crumble in the fridge for later.
Step 6
Pour blueberries into a bowl and use a fork to mash and break down the blueberries just a bit. Stir in the lemon zest and starch of your choice.
Step 7
Pour blueberries over the oat crust.
Step 8
Sprinkle the remaining crumble mixture over the top of the blueberry mixture.
Step 9
Bake for 25-30 minutes until filling is bubbly and the oatmeal crumble is slightly golden brown.
Step 10
Cool and cut into 8 bars or 16 small squares.
