This Zucchini Blueberry Baked Oatmeal is the perfect weekend breakfast or make-ahead meal that makes for dreamy leftovers. Full of delicious flavors,  this healthy baked oatmeal recipe will become a breakfast staple.

Zucchini Blueberry Baked Oatmeal

oats

cinnamon

nutmeg

baking powder

salt

milk of choice

maple syrup

eggs, room temperature (can sub flax eggs)

vanilla

blueberries

zucchini

coconut oil (divided)

Preheat the oven to 375℉ degrees. Grease a 8x8 baking dish with 1/2 tablespoon the coconut oil.

In a medium bowl, combine oats, cinnamon, nutmeg, baking powder, and salt. Mix to combine.

Add eggs, milk, vanilla, rest of the coconut oil and maple syrup/honey to bowl. Stir to combine.

Fold in 1 cup blueberries and zucchini. Top oatmeal with the remaining 1/2 cup berries.

Spread into the prepared baking dish and bake for 40-45 minutes. Oatmeal is done baking when top is golden.

Enjoy warm topped with yogurt, a splash of milk, sliced bananas, extra berries, whipped cream or simply on its own. Let cool completely and store in fridge for up to 4 days.

Preheat oven to 350 degrees F. Grease a 9x13” glass baking dish and set aside.

In a small bowl, combine oats, almond meal, baking powder, baking soda, salt sugar and cinnamon. Set aside.

In a separate, small microwave safe bowl, melt butter (or coconut oil).

In a large bowl, whisk together Greek yogurt, eggs, and vanilla and whisk until combined.

Add melted butter and milk and whisk until combined.

Add dry ingredients to wet ingredients and mix well.

Gently fold the blueberries into the mixture.

Spread evenly in a 9x13” pan.

Sprinkle cinnamon sugar over the top of your oatmeal.

Bake at 350 degrees F for 30-40 minutes (shorter if using fresh berries, longer if using frozen). The oatmeal should be browned on the top and the top should spring back when you gently touch it with your finger.

Let cool for 15 mintues and serve warm. You can also refrigerate after baking and serve cold!

Cup Very Ripe Mashed Banana

Cup Flax Seed

Salt

Water

tbsp Maple Syrup

Cup Almonds

2.5 Cups Fresh or Frozen Blueberries

tbsp Corn Starch, Tapioca Starch, or Arrorowroot Starch

Lemon

Place a rack in the center of your oven and heat to 350 degrees F.

Line an 8x8-inch baking pan with parchment paper so that the paper overhangs two sides.

In a food processor or high-powered blender, process 1 1/2 cups of oats, flax seeds, and almonds into a fine flour consistency.

Combine the oat/almond flour mixture, remaining cup of oats, mashed banana, maple syrup, and water into a bowl. Stir together until everything is combined and crumbly.

Press a little more than half of the oat mixture into an 8x8 inch pan lined with parchment paper, then set the rest of the crumble in the fridge for later.

Pour blueberries into a bowl and use a fork to mash and break down the blueberries just a bit. Stir in the lemon zest and starch of your choice.

Pour blueberries over the oat crust.

Sprinkle the remaining crumble mixture over the top of the blueberry mixture.

Bake for 25-30 minutes until filling is bubbly and the oatmeal crumble is slightly golden brown.

Cool and cut into 8 bars or 16 small squares.

Preheat the oven to 375°F and spray an 8x10 inch baking dish with cooking spray.

Line it with parchment paper to make things to clean afterward.

In a large mixing bowl, combine oats, baking powder, Cinnamon (if using), lemon zest, and salt.

In another bowl whisk eggs, milk, maple syrup or honey, lemon juice, oil, and vanilla extract.

Next, pour the liquid mixture into the oats. Gently fold to fully combine.

Stir in 3/4 cup of the blueberries and fold again.

Now pour the mixture into the prepared baking dish, using a spatula or the back of a spoon, hard-pack the mixture to create an even smooth top. Add the rest of the blueberrues on top.

Bake for 25-30 minutes or until the topping smells toasty and looks golden brown.

Place the pan on a wire rack to cool completely.

Divide into 6 squares, garnish with the remaining fresh berries on top, and serve with plain yogurt.

Blueberry Overnight Oats

Blend the blueberries. Add the blueberries to a high-speed blender. Pour in the plant-based milk, yogurt, maple syrup, lemon juice, and vanilla extract. Blend for 5-10 seconds or until smooth.

Combine with the oats. Add the oats to a large mixing bowl and pour in the blended blueberries.

Stir to combine. Using a large spoon or spatula, stir to combine the oats with the blended blueberries. The mixture will look very liquid. This is normal as the oats will soak up the liquid overnight.

Transfer to jars. Finally, transfer the blueberry oats to individual jars and close with the lids. Note: This recipe makes 3 small portions or two larger ones. This is totally up to you.

Chill overnight. Once you have filled the jars, place them in the refrigerator and let them chill overnight or for a minimum of 6 hours. The following morning, all you have to do is add your favorite toppings and enjoy!

These overnight oats can be stored in the refrigerator for up to 5 days.
