Step 1
Let all ingredients come to room temperature.
Step 2
Mix all ingredients except chocolate chips. Fold in 1/3 cup chocolate chips.
Step 3
Set bowl in the freezer for 10 minutes (this will make it easier to roll into balls).
Step 4
Roll dough into balls (about 1 heaping tbsp each) and set in the freezer for at least 1 hour.
Step 5
Melt 1 cup chocolate chips and 1 tsp coconut oil in the microwave in 30 second intervals, stirring between each.
Step 6
Dip each cookie dough ball into melted chocolate and set onto a parchment paper-lined plate. Top with sea salt and set back into the freezer for at least 1-2 hours.
