An easy one-dish recipe using uncooked pasta, raw sausage, pantry ingredients and fresh mozzarella that bakes into a cheesy, saucy Italian casserole with perfectly al dente pasta, browned sausage &#8220;meatballs&#8221; and gooey, melted cheese.

No-Boil, No-Brown Italian Sausage & Pasta Bake

Italian sausage links (1.25 lbs or so)

oz fresh mozzarella balls

Fresh grated parmesan and chopped parsley (optional)

A protein-packed snack, these Chocolate Chip Peanut Butter Energy Balls are easy to make, are naturally gluten-free and double has a healthy vegan dessert.

Chocolate Chip Peanut Butter Balls

Medjool dates (about 8)

almonds (or nuts/seeds of choice)

oats (quick

flaxseed meal

peanut butter

chia seeds

mini chocolate chips (or chocolate chips of choice)

water (as needed)

Process the dates, almonds, oats and flax in a food processor until finely chopped.

Add the peanut butter and pulse until a dough starts to form.

Add the chia seeds and pulse to combine, adding water, 1 tablespoons at a time, until the dough starts to come together and you can form it into balls with your hands. Pulse in the chocolate chips.

Roll the dough into 1-inch balls with your hands and place them in the freezer until set, about 10 minutes.

Store balls in the freezer for the best texture.

You just need 4 ingredients to make these lamington-inspired bliss balls – no baking required.

4-ingredient lamington bliss balls

store-bought Madeira cake, crumbled

(1/4 cup) store-bought vanilla frosting

milk chocolate, melted

(3/4 cup) desiccated coconut

Porcupine Meatballs

¼ tsp pepper

tomato paste

V8 vegetable juice

Combine ground beef, uncooked rice, onion, garlic, salt, and pepper in a large bowl.  Mix well to combine.

Roll the mixture into 1 1/2 to 2-inch sized balls.  (I got about 15 meatballs.)

Heat a nonstick pan over medium heat. Brown the meatballs for 3 to 4 minutes each on several sides and remove them from the pan.  Drain grease and return the pan to the heat.

In the pan add V8 juice and tomato paste.  Mix well.  Bring to a simmer then reduce the heat to low.  Add salt and pepper to taste. Add the meatballs back into the pan. Spoon the sauce over the meatballs.

Cover and cook for 15 to 20 minutes or until meatballs are cooked throughout.

Healthy Chocolate Covered Cookie Dough Balls

almond flour

coconut sugar

coconut oil ((melted + cooled))

tbsp milk of choice ((I used oat milk))

sea salt

chocolate chips

coconut oil

Let all ingredients come to room temperature.

Mix all ingredients except chocolate chips. Fold in 1/3 cup chocolate chips.

Set bowl in the freezer for 10 minutes (this will make it easier to roll into balls).

Roll dough into balls (about 1 heaping tbsp each) and set in the freezer for at least 1 hour. 

Melt 1 cup chocolate chips and 1 tsp coconut oil in the microwave in 30 second intervals, stirring between each.

Dip each cookie dough ball into melted chocolate and set onto a parchment paper-lined plate. Top with sea salt and set back into the freezer for at least 1-2 hours.

Place all ingredients except the water into a food processor and blend until it resembles breadcrumbs.

Add the water a little at a time and continue to process until just sticky enough to roll into balls.

Roll the mixture into firm balls, (wet hands can help here!) coat with desiccated coconut and store in an airtight container in the fridge.

In a medium-size bowl mix together the beef, pork, bread crumbs, onion, parsley, garlic, eggs, salt, and pepper until just combined.

Take a walnut size of the meat mixture and roll into a ball. Repeat with remaining meat and transfer to an oiled rack on a sheet tray.

Bake meatballs for 15 minutes, until golden brown. Set aside.

Melt butter in a pan on medium heat and allow it to brown slightly. Stir in the flour completely and cook for about 1 minute creating a pale roux.

This classic daifuku mochi is stuffed with either a fine (koshian) or coarse (tsubuan) sweet red bean paste (anko) and can easily be prepared at home in less than an hour using a microwave or a steamer.&nbsp;

(100 grams) shiratamako rice

(180 ml) water

(50 grams) sugar (do not omit sugar

½ cups (480 grams) red bean paste (anko)

Pineapple Balls

⅓ cup crushed pineapple, drained

(8 oz) package cream cheese, room temperature

To thoroughly drain pineapple, place it in a fine mesh strainer and allow it to drain for 5-10 minutes.

In a large bowl, add cream cheese and stir until smooth. Add drained pineapple, 1 cup coconut, cracker crumbs, and jello powder. Mix well.

Tightly cover the bowl and chill for a minimum of 1 hour.

Remove chilled dough from fridge and add the remaining 1 cup coconut to a separate small bowl.

Preheat oven to 300˚F. In a medium bowl sift together flour and salt.

In a separate bowl combine butter, honey, and vanilla. Add flour mixture into wet ingredients a little at a time and stir until fully incorporated. Fold in pecans.

Form into 1” balls and place on greased or lined cookie sheet about 2 “ apart from each other. Bake for 40-45 minutes.

Pineapple Christmas Balls

398 mL canned crushed pineapple, (very well drained)

cream cheese, (softened)

coconut

graham crumbs

Add the room temperature cream cheese to a large bowl. I like to use a mixer to beat the cream cheese. This will help to loosen it up and avoid any lumps of cream cheese in the finished product.

Next, add in the pineapple, one cup of the coconut, the graham crumbs, and the packet of pineapple jello. Just toss the powder into the bowl with the other ingredients. You do not need to prepare the jello first.

Mix the ingredients well until thoroughly combined.

Place bowl in fridge for one hour.

Once ready, portion mixture into tablespoons and roll into balls. Roll ball into remaining coconut.

Place finished Pineapple Christmas Balls into a food-safe container. Keep refrigerated.
