Place chicken, onion, celery, carrot, stock, garlic, ginger, bay leaf and thyme in a slow cooker. Cover and cook on Low for 8 hours (or High for 4 hours).

Step 2

Remove and discard thyme sprigs and bay leaf. Remove chicken and use 2 forks to shred. Add pasta to the slow cooker and return the chicken. Cover and cook on Low for 20 minutes or until the pasta is al dente. Season. Sprinkle with parsley, if using, to serve.
