Step 1
Preheat oven to 425F. Combine olive oil, vinegar, kosher salt and pepper until blended. Add grapes and toss until coated. Arrange grapes in a single layer on a baking sheet with shallow sides. Roast 20 minutes, stirring halfway. Remove from heat and let cool.
Step 2
Meanwhile, in a skillet over medium heat melt butter. Stir in cinnamon, cumin, kosher salt and chipotle chile pepper. Add pecans, toss until evenly coated and cook until fragrant and lightly toasted. Arrange in single layer on parchment paper or wax paper and let cool.
Step 3
Arrange cheeses, prosciutto, ciabatta bread and Parmesan sticks on board or slate. Place roasted grapes, spiced pecans and mixed olives each in a small bowl and arrange with cheeses. Garnish with rosemary sprigs.
