Step 1
Prepare your ingredients before starting the recipe. If theres one time you'd want to practice mise-en-place, it would be this recipe. The garlic and chili flakes heat up really fast you'll want to have things ready to go.
Step 2
Begin by adding half of the oil into a sauce pan with all of the garlic. Heat the garlic and oil over low heat. Stir and adjust the heat to make sure the garlic is cooking slowly but not browning or burning. Do this for about 5 - 10 minutes. Garlic burns quite easily so controlling the heat and stirring will keep it from browning up to fast, the goal is to slowly infuse the oil with the garlic flavor.
Step 3
Once the garlic has been cooking for about 5-10 minutes, add in the rest of the remaining oil and continue cooking for about 2-3 minutes until the garlic starts to sizzle.
Step 4
Once the garlic begins to sizzle, add in all of the chili flakes, salt and sugar. Begin stirring for about 5 minutes letting it sizzle on medium/low heat without burning.
Step 5
During the last minute of cooking add in the soy sauce and stir. Let it cool and enjoy!
