Step 1
Preheat the oven to 325 degrees.
Step 2
In a mixing bowl, combine all of the ingredients except for the ground parsley. Blend the ingredients on high with a paddle attachment until the mixture forms a sort of sticky paste. If you do not have a paddle attachment for your mixer, you can use a blender or food processor to accomplish this as well.
Step 3
Press the meat mixture into the bottom of a well greased loaf pan, and bake for 55 minutes.
Step 4
Drain any excess liquid or fat from the loaf pan, and let the loaf cool for 15 minutes.
Step 5
Thinly slice the loaf, and heat the slices under a broiler on high for 2-3 minutes if a more dried and crispy gyro meat is desired.
Step 6
Top with freshly chopped parsley as garnish if desired, and serve.
