Gyro Meat

onion,

tsp ground dried thyme

Preheat the oven to 350°F.Pulse the onion in a food processor until very fine

Dump the onions out onto the center of a thin kitchen towel set over a colander, gather up the ends of the towel, and squeeze out the liquid from the onions over the colander or sink.Place the onions into a mixing bowl along with the lamb, beef, garlic, oregano, cumin, garlic powder, thyme, black pepper, salt and olive oil

Mix well with your hands until mostly combined.Place the meat mixture into the food processor, and pulse until finely chopped and the mixture resembles a coarse paste, about 2 minutes.Pack the meat mixture into a 9x5 inch loaf pan, press the meat mixture down firmly making sure there are no air pockets.Bake until the gyro meat reaches an internal temperature of 165° F on an instant read meat thermometer, about 50-60 minutes

RESERVE ALL PAN JUICES.Let the meat cool for 20-30 ,minutes before slicing very thinly.This last step is optional

Before serving, fry the sliced gyro meat in a little of the pan juices in a skillet set over medium heat

Beef Gyros (Slow Cooker or Instant Pot)

beef chuck

cherry tomatoes (, halved)

red onion (thinly sliced)

cucumber

plain Greek yogurt

garlic (, finely minced)

red wine vinegar

dill weed

salt and black pepper (to taste)

For the Tzatziki Sauce: Combine all ingredients and stir well. Refrigerate until ready to serve.

Remove any large pieces of fat from the beef roast and then slice the meat into thin, 1/4 inch strips. Place in the bottom of the slow cooker. 

In a small bowl combine the olive oil, garlic powder, oregano, cumin, thyme, lemon juice, salt, and pepper. Pour over meat. Cover and cook on LOW for 6 hours or until beef is tender.

Add a lettuce leaf to a pita. Top with meat, tomatoes, cucumber, onion and tzatziki sauce.

For Slow Cooker:

Remove any large pieces of fat from the beef roast and then slice the meat into thin, 1/4 inch strips. Place in Instant pot.

In a small bowl combine 1/3 cup of WATER, olive oil, garlic powder, oregano, cumin, thyme, lemon juice, and salt and pepper. Pour over meat.

Cover and turn the valve to &quot;sealing.&quot; Press &quot;manual&quot; or high pressure, and set the timer for 30 minutes.

After the timer beeps allow the instant pot to rest for 15 minutes before releasing any of the pressure. Remove the lid, taste, and add additional seasonings if needed.

It&#039;s so easy to make your own keto friendly meat for gyros! Many commercial versions use breadcrumbs, but this delicious recipe is low-carb and gluten-free!

Homemade Gyro Meat

lb. Lean ground beef

lb. Ground lamb

garlic

¼ cup Finely chopped red onion

Pork rinds pulsed into crumbs

Rosemary

Ground thyme

Tbsp. oregano

coriander

Salt and pepper

Preheat the oven to 325 degrees.

In a mixing bowl, combine all of the ingredients except for the ground parsley. Blend the ingredients on high with a paddle attachment until the mixture forms a sort of sticky paste. If you do not have a paddle attachment for your mixer, you can use a blender or food processor to accomplish this as well.

Press the meat mixture into the bottom of a well greased loaf pan, and bake for 55 minutes.

Drain any excess liquid or fat from the loaf pan, and let the loaf cool for 15 minutes.

Thinly slice the loaf, and heat the slices under a broiler on high for 2-3 minutes if a more dried and crispy gyro meat is desired.

Top with freshly chopped parsley as garnish if desired, and serve.

Delicious homemade Gyros with tender and flavorful lamb gyro meat wrapped in a pita and topped with lettuce, tomatoes, red onion, and tzatziki sauce.

Make Gyro Meat (Bake in the morning or day before, if possible): Add onion and garlic to a food processor and very finely chop. Add to a bowl along with the ground meat, salt, pepper, bread crumbs, oregano, cumin, and Aleppo pepper. Use clean hands (or wear gloves if desired) to mix and mash the meat together really well, so it holds together densely.

Bake: Press meat mixture into a 9x5 inch loaf pan. Bake at 325 degrees F for about 50-60 minutes, or until the center registers 165 degrees on a thermometer. Set aside to rest for 20 minutes, and then, ideally, if time permits, refrigerate for a few hours or overnight. (Refrigeration will make the meat much easier to slice.)

Slice Meat: Remove meat from pan (reserve the fat drippings) and cut into thin strips, about 1/8 inch thick.

Brown meat: Heat a griddle, cast iron or skillet over medium high heat. Add some of the meat drippings or a little oil to lightly coat the bottom of the pan. Once hot, lay the meat slices flat in the hot pan and cook for just 1-2 minutes on each side, until browned and crisp. (Alternately, you can lay the pieces flat on a lined baking sheet and broil for a few minutes in the oven.)

Assemble Gyros: Serve gyro meat in a warm pita, topped with tomato, onion, lettuce, tzatziki, and feta.

Preheat the oven to 400 degrees F. Set out a 9X5 inch loaf pan and line it with foil.

In a large mixing bowl, combine the ground lamb, grated red onion, and all herbs and spices. Mix by hand until smooth.

Press the meat mixture firmly and evenly into the loaf pan.

Bake for 30-35 minutes.

Meanwhile, prep all the toppings for the gyros.

Carefully lift the meatloaf out of the pan by and edges of the foil. Drain off any juices. Place the meatloaf on a cutting board and peel off the foil.

Use an electric knife (or serrated knife) to slice the lamb gyro loaf into extra-thin strips.

You can use the soft meat strips as-is. Yet, to get the traditional crispy edges, created by a vertical broiler rotisserie, lay the gyro strips on a foil lined rimmed baking sheet. Set under the broiler for 2-4 minutes until the gyro meat looks dark and crispy. (Keep an eye on it!)

Then warm the pitas in the microwave for 30-60 seconds.

Sprinkle a small amount of shaved lettuce on the pitas. Top them with several strips of gyro meat. Then sprinkle with tomatoes, onions, feta, and mint leaves. Serve with plenty of Tzatziki Sauce.

these were quite delicious! I actually formed small, 1 in meatballs and baked about 25 minutes (centers should be 140°). also I served on rice since we're gluten-free.

However I didn't have the proper knife to get the perfect thin slice. I end up crumbling the lamb and made a gyro pizza out of it. The lamb within itself was so good. The seasoning requested was spot on. I'll definitely be adding this recipe to my list. Thank you

Made this for my family tonight and it was an INSTANT hit.  I asked the wife if I should keep in in my recipe book.. She said it should go on PAGE 1!!!!  It was the biggest hit EVER. And it is SO easy to make. If you are in a hurry, you can prep everything ahead of time and just throw the lamb in the oven when you are ready for dinner.  This is a DEFINITE do again.  Thank you SO much for this recipe.
