Step 1
Mix the yeast with a little of the water to form a smooth paste. Sieve the flour into a bowl and add the salt and oil. Pour and mix in the yeast, then the water a little at a time until you have a soft dough.
Step 2
Knead for 5 minutes then cover and leave in a warm place for 45 minutes or so.
Step 3
Peel and finely chop the onion and garlic. Fry it in a pan with a splash of olive oil for 5 minutes until soft and sweet. Splash in the wine and reduce by at half then add the tomato passata, basil and seasoning. Simmer for 20-30 minutes until the sauce has a spreadable consistency then allow to cool.
Step 4
Preheat the oven as high as it will go.
Step 5
Take half of the dough mix and roll out to the thickness of a pound coin. Spread over the tomato sauce, right to the edges and scatter with cheese.
Step 6
Arrange the topping of choice over the cheese and cook on a baking tray for about 10 minutes. The edges should be crispy and the cheesy topping melted and golden. Serves 3-4
