Step 1
If you haven't already, steam your broccoli florets. Fill a small saucepan with a few inches of water, bring it to a boil, and then place a steamer basket filled with the tiny broccoli florets on top—cover and cook for 1 minute. Dump the broccoli florets into a strainer and run them under cold water to stop them from cooking.
Step 2
If you haven't already, cook your bacon according to the package instructions. Then chop the slices into small pieces.
Step 3
Preheat the oven to 350 degrees Fahrenheit. Grease 16 spots of the mini muffin pan with the cooking oil spray.
Step 4
Into a small mixing bowl, stir together the entire bottle of liquid Just Egg, broccoli florets, bacon, cheddar cheese, salt, and pepper.
Step 5
Evenly distribute the egg mixture into the greased muffin pan, making sure each spot gets pieces of broccoli and bacon.
Step 6
Sprinkle on top of each egg mixture a little bit of shredded cheddar cheese.
Step 7
Place the muffin pan on the middle oven rack and bake the egg bites for 15 minutes.
Step 8
Allow the egg bites to rest for 5 minutes at room temperature to completely set, then enjoy!
