Healthy Copycat Starbucks Egg Bites Recipe

Add eggs, cheddar cheese, cottage cheese, yogurt, and salt to a blender. Blend ingredients together for 30 seconds.

Grease two silicone food molds with olive oil or coconut oil. Sprinkle the sundried tomatoes and basil in the bottom of each cup. Fill each cup about 3/4 of the way full.

Cover the silicone molds tightly with foil. Add 2 cups of water to the Instant Pot insert and place the trivet on the bottom of the pan. Carefully stack the molds on top of the trivet slight off set so that the cups are not directly on top of each other.

Cook on high pressure using the steam function for 8 minutes. Let the pressure naturally release. This took about 10 minutes. Remove the silicone molds and let cool. The sous vide eggs rose a little while cooking but settled as it cooled. Remove the foil and pop the sous vide eggs out of the mold. Store in an air tight container for up to 1 week in the refrigerator. Microwave for 30 seconds when ready to eat.

Instant Pot

For the oven, prepare as directed in recipe and pour into greased mini-muffin tin. Cook at 375 degrees for 20 minutes with a casserole dish of water on the shelf below. More tips are in the post above.

Healthy Starbucks Egg Bites Recipe

Starbucks sous vide egg bites that you can make at home in the Instant Pot or on the stovetop.

Copycat Starbucks Egg Bites

bacon

milk (can use heavy cream,

oz cream cheese (softened)

tsp salt

gruyere cheese

Cook bacon on the stovetop until fully cooked, but not too crispy

Blend eggs, milk, cream cheese and salt in a high speed blender until thoroughly combined &#8211; be sure the cream cheese is fully mixed in

Take a metal trivet (mine came with the egg bite mold) and place the silicone egg bite mold on the trivet

Spray the egg bite mold with oil so that the bites do not stick

Place a few pieces of chopped bacon and some shredded gruyere cheese into each egg cup

Pour the egg mixture evenly into all 7 egg cups on top of the bacon and cheese

Pour 1 cup of water into the instant pot and slowly lower the filled egg bites into the instant pot on the trivet

Close the Instant Pot lid and set the release valve to sealing

Set the Instant Pot on steam for 10 minutes

The Instant Pot will come to pressure and then steam for 10 minutes 

Once this is done immediately manually release the pressure and remove the lid

Allow the egg bites to cool down for at least 5 minutes before remoting from the Instant Pot

Once the egg bites have cooled, remove them from the molds and enjoy!

Store in an airtight container in the refrigerator for up to 5 days

Instant Pot Instructions

Pour 2 cups of water into a large stock pot or dutch oven and slowly lower the filled egg bites into the pot on the trivet

Turn the stove heat to high and bring the water to a boil &#8211; this will take about 3 minutes

Cover the pot and reduce the heat to medium-low and allow the egg bites to steam for 12 minutes

Remove the lid and move the pot off the heat

I have made this recipe several times. This has been my go to and life saver for breakfast meal prep! It is so easy to just throw in whatever fillings we have in the fridge. I’ve used the precooked turkey sausage crumbles with mozzarella, bacon and shredded smoked Gouda but even plain they are delicious! I’ve even subbed the cream cheese for cottage cheese (left out the milk) and they were still fluffy. All of her recipes so far have been amazing. You won’t be disappointed.

Eggs and cashew cream, combined to make a delicious breakfast bite

Bacon Egg Bites

Eggs

raw cashews

coconut milk (full fat)

onion powder

garlic powder

paprika

Baking Pan for hot water bath

Preheat oven to 300°F

Add all of the cashew cream ingredients to a blender or blender cup and blend until it forms a smooth paste

Then add eggs to a mixing bowl, followed by all of the cashew cream and whisk to combine

Once eggs and cashew cream are mixed together well, scoop mixture into a muffin tin greased with cooking spray.

Then top with pieces of bacon

Next place the muffin tin, into another baking pan, then place on the middle rack in the oven, then and pour about 3 cups of hot water into the baking pan until it come about half way up the muffin tin.

Bake at 300°F for 25 minutes, or until the eggs are completely cooked

Allow to cool completely before removing from the muffin tin

Instant Pot Egg Bites

Prepare Batter

In a blender, place the eggs, cottage cheese, salt, pepper, and shredded cheese, if using. Blend until well combined. Tap the blender on the counter to remove any air bubbles.

Prepare Egg Bites

Divide bacon (or filling of your choice) evenly between the egg bite molds. Pour the egg batter into the egg molds, dividing the mixture evenly. Each egg mold should be about 3/4ths of the way full. Cover the egg bite mold tightly with foil.

Prepare Instant Pot

Pour 1.5 cups of cold water into the inner pot of the pressure cooker and place a metal rack inside the inner pot. Place the egg bites on the rack, stacking the molds if you prepared a double batch.

Pressure Cook

Place the lid on the inner pot and be sure the vent knob is sealed. Set cook time for 9 minutes on high pressure. Do this by hitting manual or pressure cook and use the +/- buttons to adjust to read &quot;9.&quot;

Release Pressure

Once cook time has elapsed, let the pressure release naturally for 10 minutes.

Remove

Remove the egg bite mold from the inner pot and let rest for 2-5 minutes before inverting the mold onto a plate.

Pressure Cook Egg Bites: Pour egg mixture into the silicone egg bites molds. Lightly wrap &amp; cover the top of the egg bites mold with aluminum foil. Add 1 cup (250ml) cold water in Instant Pot. Place trivet with egg bites mold in Instant Pot. Close lid, then turn Venting Knob to Sealing position. Pressure Cook at High Pressure for 9 minutes, then Natural Release for 6 minutes. After 6 minutes, release the remaining pressure by turning the Venting Knob to Venting position. Serve

Large Eggs

Bacon (cooked and finely chopped)

Cottage Cheese

Shredded Gruyere Cheese

Preheat the oven to 350 degrees F. Spray a 12 cup muffin tin generously with a non-stick cooking spray.

Combine the eggs, cottage cheese, salt and pepper together in a blender.  Blend until smooth.

Then pour into a bowl and stir in the shredded gruyere cheese.

Pour this mixture evenly into the muffin tins.  Fill each tin approximately 2/3 of the way full as the eggs will rise as they cook.

Top each egg bite with the chopped bacon and gently press them down with a spoon so they are in the egg mixture and not just on top.

Bake for 20-25 minutes or until the eggs are set.

Remove the pan from the oven and let the egg bites rest for 5-10 minutes.  Gently remove the egg bites from the pan with a spoon and then they are ready to serve and enjoy!

Preheat your oven to 325 degrees Fahrenheit and spray a non-stick muffin pan with cooking spray.

In a mixing bowl combine the eggs and the Greek yogurt, along with the salt and pepper with a hand-held immersion blender until very smooth. If you don&#39;t have an immersion blender, simply use a regular blender on medium speed and blend until smooth and combined.

Stir in the shredded cheese and crumbled bacon by hand, reserving about a tablespoon of the crumbled bacon to place on top of the bites before baking.

Pour the egg mixture into the prepared muffin tin, dividing the mixture evenly between the 12 muffin cups.

Add the last bit of the bacon on top.

Bake at 325 degrees Fahrenheit for about 15-17 minutes or until the centres of the egg bites almost stop jiggling when you gently shake the pan. It&#39;s ok to remove them from the oven if the centres have the slightest jiggle when the pan is moved.

Once you remove them from the oven, let them cool completely in their pan before removing and storing in an airtight container in the fridge.
