Step 1
To make puff pastry without butter, follow the same steps as for usual pastry, but you just have to substitute one ingredient for another. So you must prepare the ingredients and proceed as shown below. Start by putting the sifted flour in a large bowl to be able to work with comfort.

The next step will be to make a hole in the flour and add cold water , at most about 20 tablespoons, olive oil and salt. If you want a relatively light mixture, put little oil in the mixture. Now you must stir well with a spoon until the flour is mixed perfectly with all the ingredients and there are no lumps.
Step 3
Once you have mixed the ingredients with a spoon, you should start working the dough with your hands, as this is the best way to create a uniform mixture. When you have already formed a ball with the pastry, you must place it in a clean bowl, cover with plastic wrap and place it for half an hour in the fridge, but where it is not exposed to very cold temperatures.
Step 4
After 30 minutes in the refrigerator, remove the puff pastry and you can now knead it with the help of flour and a roller. When you've worked it you can put it in a baking dish and bake for 15 minutes at a temperature of 150°C (302°F).
