Step 1
In a small bowl, dissolve the sugar in the warm water. Sprinkle the instant yeast over the water and set aside for 10-15 minutes until it becomes frothy.
Step 2
In a standing mixer add the flour and the salt. Make a well in the middle and add the yeasty water. Knead using the hook attachment for about 5-10 minutes. You can also use your hands for this, but note that it will require some serious kneading for at least 15 minutes. The dough will be fairly sticky.
Step 3
Transfer the dough to a lightly floured bowl and cover with a damp towel. Let it rise for 45 minutes until doubled in size.
Step 4
Transfer the dough to a lightly floured surface and knock back the air from the dough. The dough will be quite sticky so feel free to add more flour as needed in order to be able to work the dough.
Step 5
Divide the dough into 8 equal parts. Using your hands stretch the dough to create a round or oval-shaped langos.
Step 6
Deep fry each langos for a couple of minutes on each side or until beautifully golden.
Step 7
Top up with vegan sour cream, vegan cheese and chives. You can use any toppings you like, including olives, garlic etc
